Ageing Tips

TEMPERATURE: Store your wines is 12-15C degrees.

HUMIDITY: A relative humity of 50-70% will keep corks supple.

LIGHT: Wine likes to sleep in the dark. Avoid fluorescent lights - they emit UV that wine hates.

MOVEMENT: Wine prefers a quiet rest, so minimize agitation. For more cellaring tips

COLD STABILISE: The more expensive wines contain more complex organic compounds that give better quality wine. These organics can combine to form "wine diamonds". These "diamonds" are not harmful in any way, and can be seen as a sign of quality. Just decant the wine before serving.

Serving Tips

Chilling tones down the sweetness of wine. If a red wine becomes too warm, it may lose some of its fruity flavor.

Should I ever use a decanter for my wines?
A decanter is used mainly to remove sediment from older red wines.  Also, it can be used to open up young red wines.  Otherwise, wine will “breathe” enough in your glass and decanting is not necessary.

Why should I swirl wine in my glass before I drink it?
By swirling your wine, oxygen is invited into the glass, which allows the aromas to escape.

And, if you spill your red wine.... here's a tip from one of our customers. Add some hydrogen peroxide to a slightly smaller amount of the appropriate soap for the fabric, ie Woolite if red wine is spilled on wool, carpet cleaner if it is spilled on your carpet, laundry soap if it is your favorite white cotton shirt. Pour the mixture on the stain as a presoak....and watch it disappear. Then, wash immediately after treatment to keep the peroxide from bleaching your colors. Use a shampooer or wetvac on a nonwhite carpet. This will even work on old wine stains.
